The Best Pepper Steak Stir Fry

Pepper Steak is one of my favorite dishes to order at my local Chinese restaurant. I love an Asian dish that is quick, and easy but tastes amazing. The Best Pepper Steak Stir Fry consists of sirloin steak cut in to strips cooked with red, and green bell peppers, and onions in a delicious, and savory sauce. My homemade version is ready in 30 minutes, and is better than takeout.

The Best Pepper Steak Stir Fry starts by cutting beef in to thin slices. Marinating the steak for 20-30 minutes using soy sauce, white wine vinegar, worcestershire sauce, garlic powder, ground ginger, salt, black pepper, baking soda, and cornstarch to lock in the flavor, and prevent the meat from drying out. This technique guarantees an amazingly tender beef no matter what cut you may use.

While the beef is marinating it’s time to make the sauce. The savory sauce consists of oyster sauce, soy sauce, cornstarch, brown sugar, worcestershire sauce, salt, and black pepper to taste, and water that is room temperature. You could always adjust the ingredients to satisfy your taste buds.

For the vegetables I used red, and green julienne cut bell peppers, sliced onions and minced garlic. Any color of bell pepper is totally up to you. The key to a perfect, ready in minutes stir fry is to make sure all of your ingredients are chopped, minced, and sliced before you start to cook.

The Best Pepper Steak Stir Fry

Beef Marinade

  • 1 lb beef (sirloin or flank)
  • 1 tbsp soy sauce
  • ¼ tsp baking soda
  • 1 tsp cornstarch
  • 1 tbsp white wine vinegar
  • 1 tsp worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp ground ginger
  • 1 tsp black pepper
  • a pinch of sea salt

Brown Sauce

  • 1 cup beef broth
  • 2 tbsp oyster sauce
  • 2 tbsp soy sauce
  • 1½ tbsp cornstarch
  • 2 tbsp water
  • 1 tbsp worcestershire sauce
  • 1 tsp brown sugar
  • salt and black pepper to taste

Vegetable Stir Fry

  • 1 red bell pepper (julienne cut)
  • 1 green bell pepper (julienne cut)
  • 1 onion (sliced)
  • 2 garlic cloves (minced)

Optional

  • ½ can stewed tomato
  1. Cut your beef into thin slices

  2. Marinate with soy sauce, white wine vinegar, worcestershire sauce, garlic powder, ground ginger, baking soda, corn starch, black pepper, and a pinch of sea salt. Set aside for at least 20 minutes.

  3. Make brown sauce.

  4. Cut vegetables.

  5. Heat 1 tbsp of vegetable oil in a large pan on medium high heat.

  6. Add the marinated beef. Let beef fry until tender. Remove steak from pan, and set aside.

  7. Add more vegetable oil to pan, about 1 tbsp, and add all of your vegetables. Stir fry your veggies for about 3 minutes or to desired tenderness.

  8. Once onions become transparent turn the heat down to medium low. Add the beef back to the pan, along with the brown sauce. Mix it quickly. Add in stewed tomatoes if using, and more beef broth if desired. Give a quick stir. Bring to a boil. Cover with a lid, and allow to simmer until beef is tender.

  9. Enjoy with white rice.
