Calling all pasta lovers! If you love a good pasta dish as much as I do, you’ll really enjoy this Lemon Parmesan Shrimp Pasta recipe. This one-pot meal is ready in 30 minutes, and is filled with flavor. With simple ingredients you’ll have a complete dinner ready in no time. 

Lemon Parmesan Shrimp Pasta

This recipe is vibrant and packed with flavor. It’s perfect for a busy weeknight if you want to treat yourself to a gourmet style dinner, but it’s also a great dinner idea to share with a large group of friends or family

 

I chose to go a little overboard with bacon for the simple fact that bacon adds a wonderful taste to many pasta dishes. I sneaked in spinach for it’s added health benefits so I wouldn’t feel guilty about how ridiculously good this Lemon Parmesan Shrimp Pasta is. So brace yourself. You may want to eat the whole pot. Alone!

 

 

 

Lemon Parmesan Shrimp Pasta

  • 8 ounces linguine pasta
  • 1 lb shrimp (peeled, deveined & tail on )
  • 3 strips of bacon (I used Oscar Meyer cracked black pepper bacon)
  • salt (to taste)
  • 1/4 tsp red pepper flakes
  • 1 tbsp olive Oil
  • 2 tbsp butter
  • 2 cloves large garlic cloves (minced)
  • 2 tbsp lemon Juice
  • 1 tsp Italian seasoning
  • 2½ cups spinach
  • ½-1 cup Parmesan cheese (more for garnish)
  • 1/4 cup chicken broth
  • parsley (optional)
  1. In a large pot bring salted water to a boil. Cook pasta according to package directions. Drain and set aside.

  2. Place bacon in pre-heated oven or fry bacon in a non-stick skillet until crispy. Drain bacon on paper towel & crumble.

  3. Heat oil, and 1 tbsp of butter in the same pan you cooked the bacon in, over medium heat. Add shrimp, minced garlic, red pepper flakes, and 1 tbsp of lemon juice. Cook until shrimp turns pink. About 4 minutes.

  4. Add spinach & cook until spinach is wilted.

  5. Add cooked pasta to pan along with chicken broth, butter, and Italian seasoning. Stir very well. Add salt if needed.

  6. Remove pan of pasta from heat. Add Parmesan cheese, and remaining lemon juice. Add crumbled bacon. Toss, and garnish with parsley and more Parmesan cheese if desired.
