Tasty cod fish cakes

Cod fish are so versatile to cook. It’s a white fish packed with flavor. It’s a firm, but flaky fish. This tasty cod fish cakes recipe may take some time to prepare, but once cooked properly you will not be disappointed. Mixed with fresh vegetables, spices, and fresh herbs. Your family or friends will ask for more. Enjoy these tasty cod fish cakes for breakfast, or any meal time of the day!

 

 

 

This type of fish can be a bit salty, so make sure to soak overnight, or boil for 20 minutes to tame the strong salt presence. Drain, and shred or chop fish making sure to remove any bones. 

Combine all purpose flour, baking powder, chili powder ( you may also use smoked paprika), paprika, garlic powder, and onion powder, stir then add onions, chopped fish, thyme, red bell pepper, green bell pepper, tomato, scallions, scotch bonnet pepper, parsley, and egg.

Whisk until ingredients have blended, and add water. Season mixture as needed. The consistency depends on you. Add more or less water as you go.  Not too watery though!  Heat oil in pan to 350 degrees.

Form the cod mixture into cakes and fry until nicely browned flipping to assure all sides are browned. Drain on paper towels before serving. I chose to serve my cod fish with a chili garlic sauce as a dip.

Tasty cod fish cakes

  • 1/2 lb boneless salted cod fish (or any white fish)
  • 2 tsp baking powder
  • 1 cup all-purpose flour
  • 1 tsp garlic powder
  • 1/2 tsp chili powder
  • 1/2 tsp paprika
  • 1 medium onion (diced)
  • 1/2 of a scotch bonnet pepper
  • black pepper to taste
  • 3 tbsp fresh parsley (chopped)
  • 1 tsp thyme
  • 1 small red bell pepper (diced)
  • 1 small green bell pepper (diced)
  • 1 small tomato (diced)
  • 1/4 cup scallions (chopped)
  • 1 large egg
  • 1/2 cup water
  1. Soak salt fish in water overnight. Drain, and shred, or chop fish making sure to remove any bones.

  2. Combine flour, baking powder, chili powder, paprika, garlic powder, and onion powder. Stir then add onions, fish, thyme, red bell pepper, green bell pepper, diced tomato, chopped scallions, scotch bonnet pepper, parsley and egg.

  3. Whisk until ingredients are well blended. Add water, and adjust seasonings if necessary.

  4. Heat cooking oil to a medium high heat.

  5. Place spoonfuls of the fish batter into the hot oil, and fry for 3-4 minutes or until the fish cakes are crisp, and golden brown. Remove from pan and set aside. Drain on paper towel to remove any excess oil.
