My Classic Stuffed Peppers with Marinara Sauce is an incredible recipe. I just love a stuffed pepper recipe. There’s something creative about stuffing ground meat mixed with veggies, spices, and herbs into a bell pepper. The flavors are out of this world. Let’s not forget to mention the cheesy topping that takes this Classic Stuffed Peppers with Marinara Sauce recipe over the top! 

 

I’ve tried many recipes using bell peppers including my Delicious Cheese Steak Stuffed Pepper recipe that is a low carb version of a Philadelphia classic. 

I have to admit. This Stuffed Peppers with Marinara Sauce recipe far exceeded my expectations. They are super easy to prepare, delicious, and impressive enough that your dinner guests will instantly fall in love. 

The marinara sauce for this recipe is simple, and includes any left over turkey mixture that was scattered in the baking dish.

Classic Stuffed Peppers with Marinara Sauce

A deliciously Stuffed Pepper recipe with Marinara Sauce that's easy to make, but tastes great.

  • cooked rice
  • 1 lb ground turkey (or ground beef)
  • bell peppers (seeded, cored, & sliced in half)
  • 1 tbsp olive oil
  • olive oil cooking spray
  • ½ cup mushrooms (sliced)
  • 1 small onion (chopped)
  • ½ cup celery (chopped)
  • 2 large garlic cloves (minced)
  • 1 tsp garlic powder
  • 1 tsp thyme
  • ½ tsp rosemary
  • 1 can of diced tomato
  • 1½ cup shredded cheddar cheese (or cheese of choice)
  • ¼ tsp red pepper flakes
  • pinch of cayenne pepper
  • salt & pepper to taste

Marinara Sauce

  • 1 can of whole peeled tomatoes
  • 1 small onion (chopped)
  • 2 tsp garlic (minced)
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • olive oil
  • red pepper flakes
  • cayenne pepper (optional)
  • salt to black pepper taste
  1. Preheat oven to 350°

  2. In a large pot bring water to a boil, and blanch bell peppers for 3 minutes. Drain , and set aside.

Make Marinara Sauce

  1. In a large stock pot. Heat oil over medium-high heat. Add onions, and garlic. Cook for about 5 minutes, or until onions are soft.

  2. Add can of whole tomatoes with juice to the pot, and gently break apart the whole tomatoes into chunks with a wooden spoon.

  3. Stir in dried basil, oregano, red pepper flakes, cayenne pepper (if using) salt and pepper.

  4. Reduce heat to low, and simmer for 20 minutes. After about 20 minutes remove from heat.

Stuffed Bell Peppers

  1. Heat oil in a large non stick skillet. Add ground turkey, and chopped onions. Cook until ground turkey is no longer pink. Add mushrooms, minced garlic, diced tomato, 1 cup of the marinara sauce, red pepper flakes, thyme, and rosemary, cooked rice, salt & pepper to taste.

  2. Combine all ingredients. Cook mixture for a couple of minutes, or until its heated through. About 7 minutes.

  3. Prepare baking pan or casserole dish by spraying with cooking spray. Add bell peppers to baking dish, and stuff the peppers with the turkey mixture. Spread any leftover turkey mixture around bell peppers in baking dish.

  4. Sprinkle each bell pepper with shredded cheese.

  5. Bake uncovered for 25-30 minutes. Remove from oven.

  6. Spoon about 1 cup of marinara sauce on to a plate along with leftover turkey mixture from pan. Place peppers on top and serve. Garnish with parsley if desired.
