Creamy Smothered Chicken with Gravy
- 4 chicken thighs
- 1 cup celery (chopped)
- 1 small onion (chopped)
- 1 cup carrots (chopped)
- 1 small bell pepper (julienne cut)
- 2 cups chicken broth
- 1 cup seasoned flour (2 tbsp set aside)
- 2 garlic cloves (minced)
- ½ cup cooking oil
- ½ tsp adobo seasoning
Seasoned Flour
- 1 tsp onion powder
- 2 tsp garlic powder
- ¼ tsp paprika
- 1 tsp black pepper
- ¼ tsp cinnamon powder
- ¼ tsp ginger powder
- 1 tsp seasoning salt
- ¼ tsp cayenne pepper
- ½ tsp chili powder
- Clean and pat chicken dry. Lightly season with seasoning salt, black pepper, garlic powder, onion powder, and adobo.
- Season flour.
- Coat the chicken with flour and shake off the excess.
- Add oil to a large skillet over medium high heat.
- Place chicken in the skillet, and brown on all sides. Remove from skillet, and drain on paper towels. Pour off oil from skillet leaving about 2 tbsp of oil.
- Saute the onions, bell peppers, carrots, and celery until translucent & soft. Add garlic and cook for 1 minute. Stir in the 2 tbsp of seasoned flour. Combine until the flour has turned medium brown.
- Add 2 cups of chicken broth, and mix well.
- Place chicken back into the gravy and reduce heat to medium low. Cover and continue cooking for 30-45 minutes or more. Remove from heat, and serve with rice or mashed potato.
